Ernest Ching and his family lived on Pepper Row, on a sugarcane plantation known as the Ewa Plantation Company or EPCo on the dry southwestern coast of Honouliuli plain, Oahu island, Hawaii. He was the third son of Mr. and Mrs. Sen Ching and quite tall in stature especially in the knee high boots he wore on the large plantation as a surveyor. Ernest eventually achieved the position of chief surveyor after many years on the plantation. He was a member of many civic organizations as well as Chinese cultural associations in the Territory of Hawaii and State of Hawaii.
